Rendang from West Sumatra

Rendang is a meat dish known for its spiciness and lengthy cooking procedure, which originated from the Minangkabau tribe. The dish has transcended beyond Indonesia and is recognized as one of the most delicious dishes worldwide.


Bakso

Bakso is a meatball soup that is popular throughout Indonesia and includes three main ingredients: broth, noodles, and meatballs. The consistency of the meatballs is chewy, and they are served with dumplings, boiled eggs, or tofu, along with chili or soy sauce.


Ayam Goreng (Fried Chicken)

Ayam Goreng is Indonesian-style fried chicken, made with marinated chicken chunks, boiled and then deep-fried. The marinade consists of traditional spices like lemongrass, galangal, turmeric, and tamarind. While pork or turtle meat is typically used, chicken, duck or beef can also be used. To enhance the flavor and color, pig's blood is added to most variations of the dish. Lawar is often made in large quantities and served fresh with steamed rice or suckling pig.



Babi Panggang (Roasted Pork) in North Sumatra

Babi Panggang refers to a variety of pork dishes that are grilled and served sliced. The tradition of preparing pork in Indonesia is believed to have originated from Chinese culinary heritage. Pork dishes are commonly found in areas with predominant Christian and Hindu populations due to religious reasons. Before grilling, the pork is usually marinated in a mixture of traditional spices, including ginger, garlic, galangal, and sweet soy sauce. This marinade penetrates and coats the meat, resulting in tender and intensely flavored pork. Babi Panggang is served with rice, cabbage, fresh green vegetables, spiced pig's blood, and spicy andaliman sambal.
